Certified Organic. 100% Tempranillo. Limestone-based clay soils. The old vine, head-trained vineyards are located between the Jucar and Cabriel Rivers at altitudes between 750 to 1100 meters above sea level. Here the vineyards experience a push-pull between the cool, humid Poniente Wind from the Atlantic and the heat of the Levant Wind that comes from North Africa. The result is a large diurnal temperature fluctuation that favors slow ripening and perfect formation of the phenolics. All fruit is hand-harvested. Native yeast fermentation in temp-control (24-28 Celsius) stainless steel with daily pumpovers for a quick maceration of 7 days to limit extraction. Ageing in cement tanks.
