Univers is a wine made by Joan Asens, who embarked on the project with friends Pere Flores and Albert Diaz to help revive the traditional ways of winemaking in Montsant. Asens, a third generation farmer is one of the more influential winemakers in Catalonia over the last 20 years, serving as the technical director at Alvaro Palacios from 1992 to 2009 where he oversaw the production of famed wines like L’Ermita and Finca Dofi. With Univers, Joan works strictly with old-vines and indigenous varietals that are farmed either organically or biodynamically. All the fruit for Univers comes from three vineyards located in the sub-zone of El Masroig in the southwest corner of Montsant. Here the altitude ranges from 90-207 meters in altitude with an average slope of nearly 20%. The soils are quite varied with a mix of slate, clay, silt, and sand. With Univers, Asens strives for purity and elegance over power and concentration, limiting extraction and ageing in strictly used barrels.

Montsant: Practicing biodynamic. 90 % Carignan and 10 % Grenache from old vines (25-70 years old) sourced from three vineyards inside the sub-zone of El Masroig. A mix of slate, clay, and silt for the soils. Altitude from 90-207 meters. The vines are trained in the traditional goblet system. All fruit is hand harvested and destemmed. Native yeast fermentation in stainless steel with a maceration for 28 days (one moon cycle). After fermentation the wine spends 3 months on its own lees in steel before ageing 9 months in used French oak barrels (all at least 4 years old).
