The Coteaux de Dijon Chardonnay comes from vines at the top and base of a 2.5 hectare block of vines called Grand Bessy, planted in 1985. Ferment and élevage for 10-12 months in neutral barrique.
The Cras Blanc Monopole comes from the best exposed heart of the 2.5 hectare block of Chardonnay at the domaine. This special cuvée is then aged for at least 18 months in a mix of new and used barriques.
The Coteaux de Dijon Pinot Noir comes from 1.5ha within the domaine’s central vineyard called called Grand Bessy; these vines range in age from plantations in 1985-2001. Ferment is 2/3 whole cluster and 1/3 destemmed; élevage for 10-12 months in neutral barriques.
The ‘L’Equilibriste’ red comes from the same Pinot Noir vines in Grand Bessy that are used for the Coteaux de Dijon, but Soyard vinifies this cuvée sans soufre and with a lighter touch, to be ready for a spring bottling and more immediate enjoyment. Fermented 100% whole-cluster in a semi-carbonic fashion, then aged 10-12 months in neutral barriques.
This is 100% Chardonnay from his parcels in La Cras. For this wine, a smaller wooden basket press was used to press the grapes over 24 hours. Acte 1, released last year, was a blend of vintages 17, 18, 19 in 600L barrels; The Acte II includes the 20 vintage.
‘L'Equilibriste’ Blanc comes from a 1ha parcel of Chardonnay in the town of Talant, which Marc planted in 2017. Talant is located just next to Plombières-les-Dijon, but the vineyard is across a small valley and so exposed to different weather patterns than the vines at Domaine de la Cras. Ferment and élevage for 10-12 months in neutral barrique. Like the other wines made with this label, no SO2 is added.
L'Aigle & La Chouette is a homage to Josh Adler, the founder of Paris wine Co, who passed away in 2022. This wine is half chardonnay and half pinot blanc.
During the reign of the Ducs de Bourgogne, the wines from the village of Plombiers were valued more than those of Gevrey or Chambolle. The Cras Rouge Monopole is a small selection of .5ha representing the best parcels of the domaine’s Pinot Noir in this village, vinified 100% whole cluster and aged for 18 months in barriques.
