Southold Farm + Cellar

Southold Farm + Cellar is a winery and vineyard that started on the North Fork of Long Island and after a long and arduous battle with local officials, now exists in Gillespie County, Texas.

The new property consists of 62 acres, 30 acres of which are fairly steep limestone hillsides to be planted in Spring of 2018. In the meantime, they have pinpointed a few growers across the state of Texas with unique terroirs and varieties that match the climate to produce truly unique Texas wines.

While the climates and varieties have changed the stylistic approach and cellar practices have not from the New York days. Winemaking decisions are dictated by what has happened during that season, not a set of pre-ordained “way of doing things” instead relying heavily on their intuition and a bit of experience. Low intervention, natural fermentations, lower levels of sulphur, as little movement of the wine as possible, they approach each wine based on its needs, not theirs.

Sustainable. 100% Lagrein. From Southold’s own vineyards on sandy loam soil. Hand-harvested, sorted and fermented (whole cluster) with no additions. Foot-treading to start then gentle punchdowns and pressed off after 2 weeks then aged 5 months in large neutral French oak. 250 cs produced.

Teroldego ‘Weight of the Moment’ North Fork

Farming Practice: Sustainable

Sustainable. 100% Teroldego. From Southold’s own vineyards on sandy loam soil. Hand-harvested, sorted and fermented (50% whole cluster) with no additions. Foot-treading to start then gentle punchdowns and pressed off after 2 weeks then aged 5 months in large neutral French oak. Dark smoky fruit, yet fresh and lively. 550 cs produced.
